I wondered if it was possible to create a task in one board/project and once this is move to a certain stage it can copy the task onto a separate board?
We use a couple of different projects to manage various areas of the business but it would be great to assign tasks between boards?

Issues (tasks/cards/stories, etc.) are not created on boards per se, they are created on a Project. Then the board using a filter connected to a project to tell the board which cards/tasks, etc. should show up there.
So, you can have a card that shows up on two different boards (or more boards even!) depending on the filter for that board. And the beauty of it is that it is not a copy of the card, but it is the same card. So if it moves on one board, then is moves on the other board automatically!
Boards are not containers for issues, they are a view, showing issues if they match the board's query. You don't move or copy an issue "to a board", you change it in a way that means it matches the new board query.
Many board queries are as simple as "project = X", so to get an issue to "move" to a board you'd move it from one project to another. This is not a simple thing to do though, if you're moving issues between projects regularly, your Jira is set up wrong or your process is broken.
So, yes, you can also create an issue "on another board". You'll want to use automation or a scripting app to trigger creation of an issue that matches the target board's selection.
