We have a Jira Software Project and also utilize Dashboards and Confluence Reports.
I've been asked to find out if I can create progress reports that show percentage of work completed? For example, using Story Points, Start and End Date, and other data calculate that XYZ% is done for a particular story or epic or task.
I'm interested in figuring out if there is a way to write a custom field and script or if there is an add-on that would help us with this.

If you plan to try an add-on, have a look over our Great Gadgets app. It offers many useful dashboard gadgets for progress tracking. In addition, if you install the app in Jira Data Center, its gadgets can be imported and used as macros in Confluence!

You can find some progress gadgets in Jira Dashboards natively. For example, you can use a two-dimensional gadget to report progress per project. This could help if you are looking for something simple and OOTB. However, there are not many options to report progress using releases, sprints, epics, and story points.
If you are open to a marketplace solution, I recommend Mindpro Insights (I work as a product leader at Mindpro). The app allows you to create dashboards with different gadgets to report progress (story points, sprints, epics, releases, created x done, etc.) there are also custom gadgets you can configure to obtain the information you are looking for.
The dashboards are also interactive, since you can drill down the entire dashboard by clicking on a chart segment. You can share this information in different ways the desired audiences. Custom gadgets are also available in Jira standard dashboards.
The app is simple to use and do not require Jira advanced knowledge, so I believe this can fit to your needs.

Your options:
1. Try to the build in gadgets and reports, alto they are not very powerful: https://confluence.atlassian.com/jirasoftwareserver/reporting-939938675.html
2. Export the data manually and analyse it.
3. Use third party add-ons. I recommend you ignore some of the naggers that will reply to you in 3...2...1... and do your own research and comparison. There are good gems out there that cost less and do more, just try them all. Some of them come with free trial.
