I would like to create tabs in order to sort the information I need to include in an issue. Is it possible to do this?
This functionality is available in Jira Software product and I am not sure if it is available also in Jira work management.

Is this a Company-managed or Team-managed Project?

If Company-managed, Screen tabs should work in JWM and JSW Projects, as they both use the same Screen design system.
You should be able to manage Screens including tabs in Admin Settings, via Settings > Issues > Screens.

If it's Team-managed, tabs aren't available at present for either project type - check out the feature request for this here: JRACLOUD-79898
