In "Work Management" software, I can create new categories by just clicking on the list view and entering name of category in the category column.
I want to create the categories in the Jira Software Product for the Issues I create so that I can create a custom filter for the specific issues in the board or elsewhere. How can I do that?
In Jira Software you would need to create a custom field when using company managed projects.
In Team Management project you can create also category field.
Unfortunate they are all separate fields, a Custom field can be used in all company managed projects.
But if a project is a Work Management or a Team Managed project fields are contained within the project and not usable in others.

Follow Up Question:
The custom field is attached to both EPIC and Story issue type. I created a custom filter to filter EPIC and Stories in the sprint board. The custom filter only works for the story but it excluded the EPIC from filter.
e.g. I created a custom field name SKLabel, and created the custom filter using the JQL SKLabel = "Dog" or SKLabel = "Cat".
It gives me only Stories in the filter result, but not the EPIC that has matches with the query results.
