unfortunately, through mail handler you can create an issue containing just summary (email object) and description (email body).
If you need to add some custom fields on creation extracted from your email, you should develop your own mail handler or using this app https://marketplace.atlassian.com/apps/4832/enterprise-mail-handler-for-jira-jemh?tab=overview&hosting=cloud
It has capability to add some custom fields on ticket creation from email : https://thepluginpeople.atlassian.net/wiki/spaces/JEMHC/pages/73465948/Set+a+dynamic+custom+field+value
But if you need to add extra field at creation from email, that it is contained into the email itself, you can use JIRA Automation.
