Is it possible to create an issue via the REST API and set an assignee using the assignee's email address in JIRA? If so, can I see an example of how it could be done?

Thanks for the pointers. I haven't seen any documentation on how to set an assignee using anything other than the accountId after the GDPR changes. So you might be right that it's just impossible. I'm hoping someone could prove that wrong.
