I would like to know if it was possible to create different type of subtasks :
User story > "Sub-story" (with its own name)
Bug > "Sub-bug"
Task > Subtask
X> "Subtask X"
Would there be an impact between projects of one instance which propose the native JIRA or there would be a way to separate it ?
It could be possible during the creation of the "sub"-issue type to be limited for the choice : for example, when I am in an "user story", when I click on 'create subtask", could I have only the "sub-story" suggested ? (subbug for bug and subtask for task)
(context : we are developing a plugin)

JIRA doesn't allow issue type security. If you can create an issue you can create them all. There is no link between an issue type and a subtask type. there may be with a plugin. You'd have to look in the marketplace.

Why not add your new sub-task(s) to the Issue Type Scheme of your project(s). From there, you can then select the sub-task of your choice, once you've created a ticket using a standard issue type.
