How do create a subtask in my Jira backlog if I have an Epic and task already created.

Subtasks cannot be created from the backlog, they can only be created from within the parent issue.

So what you have to do is open up the issue details view and then click on + Add you will see the option to create a subtask (as long as the issue type has been added to the project).

You may also use automation to auto-create subtasks when an issue is created

To be able to create a subtask make sure that this issuetype is in the issuetype scheme of the project, then go to any issue, let say task in your case, and create the subtask.
