Create Issue triggered by a Hubspot webhook?

Using Global Automation is it possible to create an Issue with fields populated by a HubSpot webhook payload?

The trigger will be a webhook from Hubspot when a new customer deal is won.

Possibly but there's some knowledge missing on my part to make use of the article to be honest.

I guess the first stage would be for me to view the payload from Hubspot to see how the fields are named or something?

Yes indeed you need to look what the payload is providing to use the information to create a Jira issue
