Hi everyone,
I'm a bit confused about JIRA’s free plan and the different products that come with it. As far as I can tell, there are three different products, but I’m not sure which one I’m using or what each one does. Can someone break it down in simple terms, especially for someone who's a beginner?
JIRA seems like an awesome tool, even for small teams, but I don’t think I’m using it to its full potential yet (even though I’m on the free plan).
Also, can anyone explain the difference between the free and paid versions? Besides more seats, what are the key benefits of upgrading to a paid plan?

There are multiple products from Atlassian that include "Jira" in the name. Each is a separate product that you can subscribe to, but they can be integrated with each other for a more comprehensive feature set.

Jira Align
To get an overview of each product I recommend you visit the Atlassian website and review each product's info page. From there you will also find a Pricing page for the product that highlights which features are included with each pricing option. For instance the pricing page for the product named simply "Jira" is located here.

The Jira Free plan has the following limitations:
If you need more than 10 users, more storage, or more features, you can upgrade to a paid plan.

HI, so do I continue using the free plan even after the free trial has elapsed? or is it a selectable feature?

You should be able to elect to continue to use a Free subscription. Refer to this documentation for information about managing your product subscriptions:

I have had the experience of a Trial subscription expiring for the Free plan. Did you sign up for a Free Trial of the Standard or Premium subscriptions? If so, you can downgrade to a Free plan and continue to use the product. There will be some loss of functionality since the Free version does not enable all the functionality available in the Standard and Premium subscriptions.
