I'm very frustrated about a lot of changes in Jira.
Every new project when I start I should spend day(s) for figure out simple things.
Why there aren't Versions and Epics (http://prntscr.com/ki4bpv)? I can't insert estimate field.
I want to roll back for the older version! I don't want and have no time for learning updated app with a huge info.
On Cloud, I'm afraid you have signed up to take changes as Atlassian want to roll them out.
In your screenshot, it looks like you have not created any Epics or versions, and I would guess that you have not added the time-tracking field to the screens for the issues.

It was just created new jira for the new project (the latest version of Jira).
1. How can I avoid future changes?
2. How can I create an epic? I don't see this field to create like in previous versions.

1. Move off Cloud on to Server - Cloud is going to continue to get changes applied regularly.
2. Check the project's issue type scheme includes Epic, then click "create" and create one.
3. Go to screens, not custom fields.

3. There is no estimation field. I go to http://prntscr.com/kigg2u, here are: http://prntscr.com/kiggjn and nothing in a task. Also, I could type 'E' and edit task but now it's inactive.

1. You will need to download "Jira Server" and run it on your own servers, or engage a hosting company to run it for you.
2. I can't see what "issue type scheme" your project is using. However, it cannot be the one in your screen-shot, as you would not have anything but Epics in the project! Check the issue type scheme that is actually in use in the project
3. Those two screens look correct, they include the "time tracking", so they will give the user a "time estimate" field. But only if your project is using the scheme that those screens are in.
