There must be a bug in Jira, since there is no option to set it to None in the list. As a workaround you can do the following to clear the default value:

I am using Jira v8.14.1 (released in 2020), and when I go to Administration -> custom fields -> <Some Field> -> Edit Default Value
I don't see any "None" option listed, and if I click on the selected value, it doesn't unselect it.
Hence it is not possible to clear the default value and I call it a bug.
The only workaround I found is the one I suggested. Why is it going to break any data since I create a new value, that won't be associated to any issue, before setting it as default and then removing it?
If you have any better suggestion on how to do this properly, I would be more than happy to know it.

Because a value called "none" is a value, so it's not empty, and it does not mean "none" - it's broken data.
I can not replicate the problem you're having, "none" is selectable as a default value on every select list field I've tried it on (at the top of the list in the configuration, it's not ordered)

The issue happens for the type "Select List (multiple choice)". For this type, there is no way to clear the default value.

I just did a fresh Jira install (v9.12.1) from the official Docker image, and I can confirm that I am not able to clear the default value for "Select List (multiple choice)" Custom Field.

I have found how to clear the default value for a "Select List (multiple choice)" custom field.
When you see the list, just CTRL + Click (CMD + Click on Mac) on a selected item to make it unselected until none are selected.

I'm having the same issue. There is no "None" option to use as default.
In another article is says to click the value again to unselect it, but that doesn't work either.
Had to delete the value which then cleared it from the Default.

There is a none at first, but if i set a default value i can not clear this.
