I am looking for something like a checklist in subtasks without any additional plugins.
The user should be able to click on the checkbox.
Is there any way to implement that?

There're a custom field type Checkboxes, you can add it to your screen and associate with your project which issue types is subtasks.

After adding field checklist field, you need to create field context so that you get different options for different issue types and projects

Not possible in native jira. You should check for plugins in Atlassian marketplace.
