Hello
I'm looking to change root cause from being a open field to a drop down menu of a selection of root causes. Is this possible ?

No. You can not change the type of a custom field.
(You can on Server/DC, but it is a database hack, and you can only change between certain types, and in one direction - date to date/time, short text to long text, select-list to multi-select-list, for example)
You will need to add a new "root cause" field of the right type, and if you need data from the old field, work out a way to migrate it.
