I want to be able to send an email notification to my support team when an issue is created with "highest" priority. Also would like to send email notification when an issue priority is changed to Highest?

That's certainly possible to do with Automation For Jira.
There are two types of automation:

You can do this via global rules to apply to all projects also. You'll need to be a Jira Admin/Site Admin, go to Jira Settings > System > Automation Rules (left-hand menu).
