I have a project to track marketing requests. I would like to be able to create a new task/issue and assign a due date for each stage/transition. So the "to-do" due date would be before the "approval" due date, which would be before the "publish" due date, for example. Is this possible, or is there a suggested workaround for this? I am guessing I could add custom fields for each due date, but I wanted to see if there was a better way, first.

There is no out of the box feature that can handle your requirement, except custom fields.
I would try to use custom-fields as well as custom screens and a enhanced workflow, maybe using the Workflow Essentials Plugin to create a seamless and error-free workflow.
Make sure that your workflow does require the fields to be set correctly.
