I created a project and then in permission setting I changed the browse setting and manage project setting where I just added myself and not the admin, still the Admin can see that project in his login(cannot access it though) whenever he clicks on view all projects, is there any way or permission setting which I can change so that it doesn't even show in the view all project section of the admin account
if they are a Jira admin you cannot hide it from them, only if they are a project admin.

Just to be clear - you've removed the other admin from the "Browse Projects" permission in the hidden project's permission scheme?
This would include removing any groups the user is a member of from the permission, any application access permissions, etc.

Yes, The admin is not a part of any group or role which is present there in the customized permission scheme that I created for my Project.

According to this page, it doesn't appear it is possible to hide projects from Admins - see:
A 'hidden' project will still be visible to people with admin permissions; regular users won't be able to search, view or modify any of the project's issues.
^ To be clear - even if you could hide it in "View All Projects", as an Admin they'd still be able to view its existence from a site administration perspective.
