Welcome to Atlassian Community!

Yes, you can have parallel sprints and multiple boards within a single project, as long as you are using company-managed projects and have enabled parallel sprints. Team-managed projects only support multiple sprints.

A few notes, just for clarity.

A given issue can be in only one Active or Future sprint at a time. 

If the filters you use for the boards retrieve the same or overlapping sets of issues, the issues can still be assigned to only one sprint at a time.

Also, a sprint will display not just in the board where it was created, but also in any board that displays an issue that is assigned to that sprint. So, if your boards retrieve the same or overlapping sets of issues, then sprint from each board may display in the other board. This is intentional, to help people understand that an issue in their board is already assigned to an Active or Future sprint somewhere in the system.
