I am unable to change issue creation date while updating defect. Can we change the creation date of issue which is created today and set it to 2 days previous date?
No. Issue creation date is the date the issue was added to Jira.
If you want to record something like "date of incident", use a custom date field for it.

Resolution date is also supposed to tell you when something happened in Jira (issue was resolved), so yes, if you want to capture "date incident was declared fixed", you'll want a different field for it.
