Can we Modify the existing Hierarchy, EPIC -> ISSUE -> SUBTASK ?

We need a Hierarchy above or below EPIC to group user stories in smaller chunks.

We need something EPIC -> sub-EPIC -> UserStory -> Sub-task

We are currently on JIRA v7.12.3 and server hosted.

No. There are some plugins that may do something like that.

No. Do a search for issue type hierarchy. I prefer not to go much outside the built in functions. I use the jira suite utilities and that is about it.
