(/) and (x)<- The shortcut for getting the emoticon for the check and x aren't working for me within Jira. A colleague of mine can use them, but for some reason, when I do they just stay as raw text.

Maybe you are using the wrong text renderer.
On the bottom of the textfield should be two tabs to let you choose between Visual and Text. If yours is set up to Text it will not convert the markup's into the specified "emoticons". Therefore try setting it to Visual.
