Subtaks are enabled globally in my Jira, but I cannot add sub-task issue type to a project
Sub-tasks are missed in new-gen Jira templates. So I should change template to enable sub-tasks

I tried to create new project. Search in different settings. But nothing related to this in settings and new project doesn’t have that too

What type of project are you creating? The standard create project dialogue will ask you for a type. If you're not using that, then it's an individual project, which won't have subtasks.

Yes, you are right - the next-gen templates do miss sub-tasks, completely. If you want them, you'll need to create "old" style projects.
