I saw someone on the community write
"In our company, we estimate stories in story points and tasks in time."
He indicated that they could then use time utilized to measure against how many story points they were able to achieve in that time, so they could hone their story point estimation.
I love the idea since you can then report on both time and story points
But I simply don't see how to do it from the Jira interface. How does Jira let you set up time estimates for tasks, but story points for stories ?

On an agile board you are allowed to choose only one statistic for Estimation, and it will be applied to all issue types in that board. That is the statistic that will show on Scrum boards to summarize the amount of work in the To Do, In Progress, and Done status categories, and be used in burdown charts.
You can, however, have both Story Points and time estimation/tracking fields available in the issues.
On several of the built in charts you will also find a pull down field that lets you dynamically switch between the available estimation statistic options when viewing that chart.
The first question we need answered in order to guide you to the settings is:
Are you working with a Team Managed project or a Company Managed project? That information is shown at the bottom of the navigation pane on the left when you are viewing the board.
