I would like to know if I have several projects that hang from a template, if I modify something in the template, would I lose incidents, or if I make the fields mandatory, would I lose any data or any incident, I also wanted to ask, if I create fields and delete fields in the incident data, all this could affect, thank you very much.

Two things
1) The first screen you shared is from a team-managed project. If you make any changes to a team-managed project, it doesn't impact any other projects. Team-managed projects are completely independent from each other. You can add or remove issue types, custom fields, change the workflow, and the only project in scope for the changes is the one in which you are working.
2) For company-managed projects, yes, you need to weigh the pro's and con's of making changes to shared schemes. However, it's also possible to, in the case of the workflow, take a copy of the shared workflow, make changes and then create a new workflow scheme to have specific changes only to one project.

The short answer to your question is, if you make changes to shared configurations, such as removing a status from a workflow, the change will impact all of the company-managed projects using that workflow. However, Jira will also prompt you to move any issues in the status that you are removing, so it's not as though you would delete whole issues with this type of change.
