next-gen - creating new statuses is simply done by creating a new column in the board.
classic - you edit the workflow and add the desired statuses and create the necessary transitions connecting the statuses. Then if you wish these statuses to appear on your board you need to map the, to the appropriate columns. This is done by clicking the ellipses in upper right of board view > Board settings > Columns and drag unmapped statuses to columns as desired.
