Can I change the default projects view?

I need to show all the projects are not a list like Kanban boards. Where the project moves through the stages over pipeline like a CRM stages

I am not sure how you want your projects to look like. Have a look at the structure plugin. Or Big picture

You would need to create an issue type with the Issue Type Project and add a workflow with stage1, stage2 and so on statuses. Then you can connect all issues to one of the project issue types. 

On the board you will be able to see stage1, stage2 columns for the project issue type.

When i say project i mean jira project like scrum projec not issue.

You can not have such a view with projects. You would need to develop a plugin
