Um, I think that purple block is actually something you've added to the summary, it's not a Jira icon
Try clicking "edit" on the issue and check out what is in the summary field.
Sorry, it's not part of the summary, it's the epic colour.
But the rest of my answer is right - it is not a Jira icon and you can change it by clicking edit. And the issue type is not story, it is an Epic

You can change the entire icon for each issue type, not just the color.
Go to Settings > Issues > Issue types
Search for the Story issue type and click Edit
Then Click select image to upload or change the icon associated with the issue type.
Be sure to click on the Update button once you have made the change.

I found no option to change it's default - but you can click on the purple area and select a different color. In my example it worked for an Epic - whereas a Story does not show the colored squared but I did not check further why this is the case.
