Our company has Jira/Confluence licenses and some of our developers use it. It's been poo-pooed by execs in favor of what I consider a sub-par ticketing system.
I want to learn JIRA/Confluence fairly well so I can successfully make the case about how to retool our subscriptions to work for the entire DevOps team and maybe eventually the service desk.
I see free trainings available, but I'm overwhelmed.
Can anyone help out with a training plan to get me prepared for setup, security, and workflow questions?

Which trainings have you looked at? A lot of the Atlassian ones really are quite good. If you are looking to dip your toes in the water to understand, I would recommend checking out the Jira Software Fundamentals course. Once you've got a solid understanding of the tool, I think getting into the workflows and everything will be a bit easier.
