I was assigned the task of creating a review of all automated tasks so that we can follow up with those who completed them.
For example:
We created an automation rule for weekly backups, as well as one for a yearly review of our AD users.
I would like to create a table that automatically updates when a rule is triggered, showing who completed the task and when.
What would be the best way to do this?
It doesn't have to be a table. I'm open to any solution.

Create a filter, that finds the issues created by these automations and show the columns required, like assignee and resolved.
As an extra you can create a dashboard in Jira and use the filter results gadget to show this information, then you won't have to select and open the filter to see the results.

After thinking about it, I have a question: Is there a way to show it differently?
Specifically, I would like to see a view of the automation rules along with who completed the last task and when.
I hope I'm clear enough here. I'd like a list of all automation rules with a short current status, such as "done by xxx at ??"

No there is no field that provides this information.
Also the automation you mention, fire on a schedule an create an issue, there is not information in an automation rule on issue completed, as the automation rule is not completing this.
On work items many automations can run, there is a section called automation on each one that when hitting refresh in that panel shows the 10 latest automations that have run on the issue,
This includes success, not executed and failed.
Actions don by automations are to be found in the history section of a work items.
