How do I attach a Priorities scheme (already credited) to a Screens scheme (already created)? Is there an image of what to click on in Admin?

Priority Schemes are not associated to Screen Schemes. They are associated to Company Managed Projects. They are applied to all issue types in the Project.
Go to the Priority Scheme and select Edit
Click on the Projects tab in the pop-up.
Select the project(s) in which you want to use the scheme, and click Save.
I've done all that so far, and have been able to see the priorities in the sub-tasks. But I can't change the default. Any ideas?
Can you provide more details on what you are trying to accomplish?
The default priority value to be used is set within the Priority Scheme. That default value will apply to all issue types in the project(s) that use that Priority Scheme.
To change the default priority for the Priority Scheme, edit the scheme. Hover you cursor over a priority that is not currently set to be the Default and you will see "Set as default" appear. Click that to make the specified priority the default for that scheme.
