I set up a new mail handler and it's working well. However, when a user sends an email to xxx@xxx.com (a registered email address on the mail handler), the email sender is not assigned to a reporter. Instead, the default reporter on the mail handler is a reporter.
I believe that, by default, the sender of the email will be marked as the Reporter for the issue. However, this is not my case, and I am not sure how I can fix it.
Could you please give me any advice or instructions to fix it?

Hi Brian, my theory is that the sender is not currently a Jira user. If the person that is sending in the email (from) is not a Jira user then the default will be used. You can set it up to add the sender as a new user if you wish and that should resolve it. Can you confirm if my theory is correct?

The sender is a Jira user and no external user sends an email to create an issue. That's why I don't understand why it happens.
