In the List View there are 3 dots on the far right of each row that allows specific action to occur. Can this list be edited. For example can I add "Due Date" to the pulldown to edit a "Due Date"

There are some addins that i believe can add options to the menu. Basically if it can be added to the "more" menu on the issue view, it will show up in the menu on list view as well.
For example, if you set up an automation rule with a condition of "Manually triggered" it will add that to the dropdown.
For your specific case, you can make a transition that loops back to itself called "Due Date" with a transition screen that will allow you to update the due date field.
That should cover what you are looking for.

Jira doesn't allow inline-editing in it's "default" views, but there's a couple of options:

Just to expand on the last point: If you'd like to inline edit your issues in a list view, you might want to try the app that my team and I are working on, JXL for Jira.
JXL is a full-fledged spreadsheet/table view that allows viewing, inline-editing, sorting, and filtering by all your issue fields, much like you’d do in e.g. Excel or Google Sheets. You can also bulk-edit your fields using copy/paste, and utilise advanced features such as support for issue hierarchies, issue grouping, sum-ups, or conditional formatting.

JXL works on and across all project types, and integrates into the project sidebar, making it easily discoverable to all team members. Many of our customers use it successfully as an extension to Jira's built-in list and table views.
As mentioned above, there may be other apps that can help with this, too. You may already know that you can trial any app for free for 1 month, and depending on the size of your size, it may be free forever. So if an app is an option for your, perhaps try a few and see which works best for you.

Makes sense, but I do not have that option at this time.
It did work at my last company, however we had a newer version of the JIRA (not 8.20.12) and the Structure Add-On which is great (from ALM Works).
