I want to know if it is possible to add fields to the create epic screen in the epic panel
I understand that it's possible to click on the configure fields drop-down to see the rest of the fields, but I am hoping to add more fields to the initial screen.

Unfortunately, it is not possible on the Epic create screen from the board and create epic dialog does not remember which fields should be displayed.
There is a similar type request opened with the Atlassian https://jira.atlassian.com/browse/JSWSERVER-9339.

It is not possible to add fields to the screen, which pops up, if you create an epic from the board.
Have a look at this thread:

Do you mean ..while creating an epic issue then yes, you can.
go to project settings and open the issue type screen scheme and then edit the screen scheme which was associated with epic issue type and then add the fields on it.

Let me explain a bit more:
When on an scrum board and on the backlog view with the Epic panel expanded, it is possible to create an Epic by clicking on " Create epic"
Currently, the following fields appear :
If I want to see more fields I need to click on the the configure fields drop-down, which will expose all the fields which have been configured for the create screen.
Is it possible to add more fields to the initial screen when first clicking on "Create Epic"?
Example:
The idea is not to have to click on the configure fields drop-down to expose fields. Sometimes we just want to quickly create Epics and only fill in the required fields as in my example.
