We want to add the "Severity" field to an an issue type that we've been using for a while called "Production Issue" and make it required. When I go to the "Issues->Types" section for the project, I see for each issue type, the workflow, field configuration and screen for the "Production Issue" in the project. What I can't figure out how to do is to add change the workflow, field configuration or screen for this project/issuetype combination.

In order to add the new field and make it required for only one issue type you need to create a new field configuration. If you go to Settings > Issues > Field configuration. From here locate the one that is currently used by the project and copy it. Once you made the field required, you need to associate this new field configuration with the field configuration scheme and associate the issue type with the new field configuration. And if you want to hide the field for other issue types, just go into the original field configuration and hide the field.
