Add a specific workflow to an Issue Type and creating boards

I have recently started using Jira Software for the first time. 

I have two questions

1- How am I able to configure a specific workflow for an Issue Type? E.g A defect should follow a specific path to resolution, but a user story would follow a different path to resolution

2- How do I create a new board for my Jira Software project

Issue Type Schemes are what allow you to assign unique workflows to different issue types. The general order of operations would look like this:

1. Create two workflows - one for Defects, one for User Stories.

2. Create a new Issue Type Scheme.

3. In your new Issue Type Scheme, assign the Defect workflow to the Defect issue type and the User Story workflow to the User Story issue type.

4. Assign your new Issue Type Scheme to the project you're trying to update.

I know this is possible in Jira Core. How can I create a specific workflow for that issue type in Jira Software
