My team frequently adds watchers to existing tickets. With the release on 6/27/2018, I have gotten an influx of questions about how to add watchers to a ticket?

Welcome to the Atlassian Community.
Nothing in 7.10.2 have changed that affects how you add watchers, you still just click the number next to Watchers and that will bring up the screen where you can add watchers.

That option no longer appearing. I only see an the eye icon where I can either add myself or remove myself. I can no longer add someone else. The image that you screenshot above, is what my team used to see.

Are you using Jira Cloud or Jira Server? I see the eye icon in Jira Cloud when looking at the detailed view via a Board, not on the Server.

Okay, so in the new Jira Cloud UI you have to go to the Issue detail view in order to manage watchers, it cannot be done from the pop-up when you click on it on a board.

@Amy Yeh As mentioned above, you have to go to the Issue detail view and from there you just click on the number to the right of Watchers and in the pop up you can start adding watchers.
Note that you have to have the Manage Watchers project permission in the project in order to add watchers.

@Mikael Sandberg, I believe I'm looking at the Issue details view. Screenshot attached. The URL looks like https://xxx.atlassian.net/browse/HELP-619. And I'm not seeinf any Watchers label or number indicator like I used to.
Is there another view?

@Amy Yeh What happens if you click on the Jira key? If you click on See the old view you should be able to add watchers from there. Atlassian is still working on the new Issue view, see The new Jira issue view

@Mikael Sandberg, if I click on "See the old view", then of course I can add watchers since that was the old view we had been using. The issue is that the ability to add watchers is not there in the new view. Do you know when it'll be added back to the new view?

@Amy Yeh No I don't, but you can add yourself as a watcher of the page I linked to, and I would also go and vote and watch JRACLOUD-69751 which requests to have that ability added the new issue view.
