Once I link the gmail account to Jira, then what happens to the emails?  Will that user's mailbox continue to growth or will the emails be remove as they get converted to tickets?

You can configure the settings in Gmail to decide whether the mail is to be removed, or just set as read.

It's there in Gmail --> Settings --> Forwarding and POP/IMAP.
