From EPIC to User Story to Sprint planning

Perhaps I am missing something basic but both the help page here and the Udemy training course I purchased go from creating a project shell to adding your users to managing a board assuming user stories materialised from thin air. I can't seem to find proper guidance on where to capture my epics (I found how to do this), then capture my user stories (i can capture issues) and link them to the correct epic and then create the sprints and releases.  What am I missing?

Even Bluemap's support is very helpful. Their courses and support better whatever I have seen till now.

I'm not familiar w/ Udemy and am unsure if others is the Community are. You might want to reach out to Udemy directly if that is an option. a quick Google provided me w/ their Support site.
