However, when I click on a rating star (e.g., star 1) in the email, the redirect doesn't preselect the corresponding star on the web form. Is there a way to make the selected star reflect automatically on the form after the redirect?

The guide you referenced is for the DC version of JSM only (as stated in the blue box at the top).
There are quite a few differences between cloud and DC versions of JSM.
I'm sorry but I am not quite sure this functionality is available in the cloud at all.
