Is there a field that stores the result of an approval (Approved / Declined)?

Welcome to Atlassian Community!

Yes, there is a field called Approvals, but it is a locked field and is updated based on approvers action. You can filter on Approvals, see Advanced search reference - JQL functions

There isn't a function that will do that, but you can search on the status that the request goes to when an approver declines it. Example: status = Declined

Is Approved / Decline a status/stage in your workflow? If so, you can search for Status or StatusCategory in JQL.
