Is it possible to restrict JSM Customers from seeing other customers requests when they access the Help Desk portal in their profiles like here:
That person here has access to all requests that are created even when the Requester isn't the same.
They only have a JSM Customer role and nothing else.

There are usually two configurations you should check:
1. The user rather has agent than only customer permissions
2. The customers share the same organization membership and the requests are shared by default.

You can use organizations in JSM peojects. Organizations are groups of customers Who can share requests and access them from jsm portal. More information Here

To restrict JSM customers from seeing each other's requests in the Help Desk portal, you need to configure the "Customer permissions" settings for your service project.
Steps to follow :
Changing the Customer Permissions
Go to Project settings > Access >Customer permissions.
Under Channel Access, select Restricted - Only people directly invited to this project can submit requests.
Save.
