Pick time stamp through post functions

Create a date time field called In progress time stamp and capture time stamp ticket when it move to in progress status

You have actually gave the solution yourself :)

• Create a date time field
• Add this field to the view screen of your issue types inside this project
• Go to the workflows of your issue types
• On the transition to "In Progress" status add a post function
• Click "Update Issue Custom Field"
• Select your custom field
• As value write %%CURRENT_DATETIME%%
• Publish your workflow
