Are there permissions that will allow a user to see a task assigned to them in a project but not see any other tasks that are not assigned to them?

Hi,

yes this is possible, you have to play with the permission in the project. And give the browse permission project to the current assignee. https://support.atlassian.com/jira-cloud-administration/docs/manage-project-permissions/

you can also play with issue security level to achieve this.

Welcome to the Atlassian community.

What type of project does this concern? Get the project Type from the View All Projects page available from the menu Project > More Projects.

It should be noted that the references provided by @Mohamed Benziane apply only to Company Managed projects.
