Modified the workflow to a new approval field. How do I correct the existing tickets?

First, am new to trying to manage ServiceDesk.

Second, it was already setup and running when I joined the team but the people that set it up are gone.

Third, I have not been able to locate how they did the list of "Approvers" including the default approver and the list of approvers.

Fourth, there are two different approvals involved:

1. Approval of ticket upon submission 

2. Approval of ticket by peer reviewer upon completion before going to closed

Here is what I have done:

1. For the initial approval, I ended up creating a field called Approvers and then added the team members to this field as approvers. This is working properly (so far).

2. For the Peer Reviewer approval, I ended up creating a new field called "new peer review" and added the team members to this field as peer reviewers. This is working properly (so far).

I looked through the field definitions and the workflow steps but could never find where the original values were defined.

For the "Approvers" the field did not exist so I felt that by creating the field, it would work properly, which it has.

For the "Peer Reviewers" field, it did exist but I could not locate where the peer reviewer list was. I created a new field with a new name, updated the workflow, and that will work for the new issues.

Here is the problem:

There are many existing tickets that have a couple of iterations of peer reviewers assigned. I was not part of the old "Peer Reviewers" or the "New Peer Reviewers" group.

How can I go back through the old tickets that are awaiting peer review from the "Peer Reviewers" and assign new peer reviewers to them so that they can move to closed in the workflow?

Is there a way to restart the workflow on the existing tickets and basically send them back to a particular status where they would re-read the workflow and take the updates?

And finally, any thoughts on where I could find the previous "Approvers" & "Peer Reviewers" setup? I figure I will come across another change that needs to be made to a default value or existing field and would like to just be able to make the update versus a workaround.

I figure since I did not delete the previous "Peer Reviewers" field, I should be able to try to locate where it is based upon idea's from here.
