Are errors, anomalies and actions carried out in the management of Jira services recorded in a log file to ensure traceability? If yes, where can i find this file?

Logging options can be found in the audit log, with limitations.
Main logging is not customer facing, as the integrity of your SaaS instance is controlled by Atlassian.
If you encounter strange behaviour on your instance, you would need to contact Atlassian Support.
Support is only available to paid instances, free instances are excluded from support.
