As the title says a user that previously worked for the company started a timer on this task/issue  and never stopped it before quitting is there a way to stop this timer and clear it out so it doesn't mess with the stats for the customer.

I'm guessing you're using one of the following Marketplace apps that has this 'stopwatch' functionality 👀
If so, I'd suggest navigating to the specific Marketplace app listing > "Support" tab.
Here, you should find contact info to reach out to app vendors directly (the recommended way is to submit a support ticket/request via service desk). Their team is usually quite responsive and helpful when it comes to troubleshooting issues.
I don't think I've used the app you're talking about, so I cannot be much of assistance here :/
