I have several one to many relationships that I am attempting to create is assets. In my example I have a sales agent that is affiliated with multiple merchants. I created an attribute within a sales agent object type, but in practice I have learned that this field only holds one entry. Is there a way for an object type, or other attribute to take more than one object?

thats an easy fix. You just need to adjust the cardinality in the object type attribute config:
