I have upgraded to Jira premium and am testing out Insight for IT asset management. I noticed that Insight is available for all projects. Meaning if I am working in another project I can see the "Insight" tab and all schemas and objects. I want to be able to restrict Insight to just one specific project. Is that possible?

Access to Insight is on an Object Schema level which allows you to set based on users and groups.
Select the Object Schema, then select the Configure option, and then click on the tab.

You will not be able to hide the menu, but you could restrict access to the object schema. If you go into the object schema and then click on the object schema button up in the right hand corner and select Configure > Roles. From here you define which users and groups that should be able to access the object schema. You can learn more about roles here.
