What kind of activities are you asking for against your Assets schema?

Based on my knowledge - tere is no audit trail or history for changes made to a schema or object type configuration including adding/removing attributes or adjusting attribute settings.

I would recommend you to contact Atlassian Support (https://support.atlassian.com) because they have the ability to view the system logs against your site.  You can also ask them if they have a way to generate the what you are looking for.
