I was wondering if anyone could give guidance on metrics an how to learn and modify existing metrics (JSM reports). Any docs or videos or udemy course would be appreciated.

You can search courses by product (JSM), which there are a few courses where reporting and JQL will be part of that. You will also find more information around reporting and JQL at Jira Service Management Cloud documentation. I know it's not a direct answer as it doesn't look like there is a specific JSM reporting course available at Atlassian University yet, but it will certainly give you pretty good insights on that. I'm interested in hearing from others around that too.
